Spinach Ramen Frittata

A big yummy bite in the morning is something no one will say no to. All want delicious recipes that are healthy for a bright morning. So, let me take you to this recipe that fits perfectly within the terms of ‘healthy’, ‘tasty’ and ‘bright.’

• 1 3-oz pack of ramen noodles
• 12 oz of bok choy
• 1 ½ tsp of sesame oil – toasted
• 3 tbsp of vegetable oil
• 8 oz of chicken
• 8 eggs – large
• 1 tbsp of oyster sauce
• Some salt and pepper
• 2 cups of coleslaw mix – shredded
• 6 scallions – chopped
• 2 tbsp of ginger – pickled, cut into slices.

1. Cook the ramen noodles on a medium saucepan for 3 mins. Drain and drizzle the sesame oil and keep this aside.
2. On a large skillet heat the vegetable oil at medium heat. Place the chicken and drizzle the oyster sauce and sprinkle in some salt and pepper as per taste. Cook it well for 3 mins.
3. Once the chicken is cooked, transfer the coleslaw mix with the chopped scallions and some sesame oil along with some salt. Keep this on medium-high heat and cook for 2 more mins.
4. Take the mixture out from the skillet and wipe it out.
5. In a large bowl mix the eggs, some salt, and pepper with the pickled ginger. Add the drained ramen and the prepared chicken mix.
6. Grab the skillet and heat another 1 tbsp of vegetable oil. To this, add the egg mid and keep it on medium-low heat.
7. Leave it undisturbed until golden-brown; for 8 mins on either side.
8. Now remove it from the heat. Then, place it on a flat plate to serve.
9. Once that is done, Sauté the bok choy with oyster sauce into a crisp-tender form by cooking it on a large skillet at medium-highflame. Throw in some salt and pepper to give it a taste.
10. Serve this along with frittata and enjoy it warm.
