Midweek Ramen Meals with Turkey Meatballs

Why not make your Wednesday lunch interesting with a super combination of meatballs and ramen noodles? Make your Wednesday afternoons less boring with a hot bowl of this recipe. If shared with your family and friends, I bet they are gonna ask you how you made the ramen noodles look so good.

• 1½ lb. of pork – minced
• 4 3-oz packets of ramen noodles
• 2 eggs – large
• ¾ tsp of pepper
• 5 scallions – sliced
• 1 tbsp of ginger – grated
• 3 tbsp of soy sauce
• 2 tbsp of mirin
• 2 tbsp of canola oil

3 tbsp of sesame oil
• 4 cups of vegetable broth
• ¼ cup of miso – white
• 6 heads of bok choy – cut into half

1. On a medium-sized bowl, mix the half-sliced scallions, half ginger, along with half portion of soy sauce and sesame oil. Add in the eggs and pork as well.
2. Once the mixture looks good enough, make small balls.
3. On a Dutch oven over medium-high heat, heat the canola oil.
4. Cook the meatballs by batches until they turn brown for 8 mins.
5. Place them onto a plate and keep it aside.
6. On medium heat, place a large pot and heat the remaining amount of sesame oil. To this, add the remaining scallions (save some for garnish) and ginger. Cook for a minute.
7. Next, pour in the vegetable broth along with the remaining soy sauce and mirin. Simmer the mixture.
8. Whisk the broth and mix until thick like a soup.
9. Then, throw in the noodles and the prepared meatballs. Cook this for 2 mins.
